Kale Salad with a Kick

1 Bunch Kale (stems removed, chopped roughly)

1 Red Bell Pepper, chopped

1 avocado chopped

1 green onion (spring onion), chopped

Juice of 1 Lemon

Himalayan Pink Sea Salt, to taste

pinch of cayenne

Sprinkle of raw pumpkin seeds

Toss all ingredients in a large mixing bowl.  Massage kale until softened with hands.  Serve immediately.  I had mine with a smaller grilled chicken breast seasoned with a variety of dried herbs.
