Oops I forgot the almonds in the recipe! They’re on there now 😉Seriously, this stuff is so easy and so tasty and soooo satisfying. I love having variety when it comes to breakfast-after all it is the most important meal of the day right? But really, it is very important to eat a healthy breakfast to start your day off well. Yum Yum Yum.
Makes 2 servings
2 Granny Smith apples chopped roughly
1 c raw almonds (soaked for 24 hours)
2 inch piece ginger grated
2 dates soaked until soft chopped roughly
1/2 lemon (juice only)
2 TBSP chia seeds soaked in 6 TBSP water until gelatinous
Cinnamon (to taste)
Nutmeg (to taste)
Soak almonds in water overnight. Rinse and drain.
Combine all ingredients except chia seeds in food processor and pulse until desired texture is obtained.
Transfer ingredients to mixing bowl and stir in chia seed “gel”, cinnamon and nutmeg.
Serve topped with your choice of toppings. (Pictured with fresh strawberries, blueberries and unsweetened coconut.)
