Coconutty Turkey and rice 

I love quick healthy simple dinners. Here is one we had tonight.

Served over wild black rice.


Step One

1 tsp Avocado oil (for cooking turkey)

1 package Extra lean Turkey mince 

1 c frozen peas

Spices (to taste):






Black pepper

Heat oil on stove top in deep pan on med-high heat.  

Add Turkey mince and spices.  Cook until meat is browned.  Turn heat down to medium.

Take peas out of the freezer and set aside to defrost for topping the dish.

Step Two:

Add the following veggies and continue to cook for about 5-10 minutes stirring occasionally.  

Note: now would be a good time to cook your rice.

4 medium carrots (peeled and shredded)

12 Asparagus speers (diced)

2 plum tomatoes (diced) 

Step Three

Add one can full fat coconut milk, stir to combine. 

Bring to a boil and reduce heat to simmer for 15 minutes. 


Step Four:

  Add 2 large handfuls spinach and continue to cook mixture until liquid begins to thicken.  

Taste test and add any spices from earlier.


 Serve dish over rice of choice (I used wild black rice) and top with thawed peas.
