This is a quick and easy, delicious salad, I usually like to have for lunch.
It takes minutes to throw together, but is super satisfying!
If you would like more protein, feel free to add some grilled chicken or fish on top. Chickpeas or white kidney beans would work as well.
1 ripe avocado
3 tbsp sunflower or pumpkin seeds
Large handful sprouts (I like alfalfa or broccoli)
1 medium carrot grated (I usually have a bunch in the fridge)
1 tbsp raisins
Combine all ingredients in a bowl, drizzle with fresh lime juice, a little avocado oil and some sea salt.
