Eggie Avocado Open Faced Sandwiches

This is somewhat of a glorified take on the traditional “egg salad sandwich” except WAY healthier and WAY tastier (in my opinion of course).

Great for lunch!

Ingredients:

3 hard boiled eggs (coarsely chopped)

3 radishes (chopped small)

1 spring onion (chopped)

Handful cilantro (chopped roughly)

1/2 an avocado (mashed)

Juice of half a lemon

Salt and Pepper to taste


Hard boil eggs ahead of time and let cool in fridge.

Chop all ingredients. Mash avocado. Juice lemon.

Combine all ingredients in a medium bowl and mash lightly so the avocado coats all the other ingredients. Taste test and add salt or pepper as you please.


Serve on sliced toast (I used Ezekiel today) bed of sprouts and throw a few tomatoes on your plate.
