Protein Pancakes

All you need for these protein packed puppies are 3 ingredients:

2 eggs

2 Ripe bananas (mashed)

1 cup whole oats

Mash the bananas in a bowl first.  Add the eggs and oats and stir to combine.

Heat a little coconut oil over medium heat.

Add two pancakes (any size you like).  Flatten as much as you can with a spatula (it helps cooking)

Let cook on medium-low heat for 4 minutes.

Flip carefully and cook for another 2 minutes.

Top with berries or whatever other topping of choice.  These are a tad crumbly so no knife required 😊
