Cauliflower “Rice”

This is a simple and quick substitute for rice.  I like to have something different every once and a while other than a grain.

You actually don’t even have to cook this.  You can eat it raw if you are in a hurry or if you simply prefer it that way.

Ingredients:  

Small head of Cauliflower

1 Tbsp olive oil

Sea Salt to taste

Pepper to taste

Fresh Cilantro , chopped

Fresh lim juice (1/2 lime)

Directions: 

Preheat oven to 450 degrees.

1.  Chop cauliflower into small bits.

2.  Pulse in food processor (in two batches) until rice-like in texture.  Not too long or you will end up with mush, trust me! haha

3.  Spread cauliflower on baking sheet.  Drizzle with your olive oil and sprinkle with salt and pepper.

4.  Bake for 5 minutes.  Remove from heat and stir around.  Bake for another 5-8 minutes.

5.  Put “rice” in a large bowl.  Add chopped cilantro and lime juice.  Mix well. Serve!
