Lemon Coconut 2 Bites

These are good to have on hand when you need a little energy boost or feel like a little indulgence. 1 is enough to do the job.  Yummy.  

I keep mine in the freezer, they just taste better that way for some reason!

  
Makes 12-24 depends what size you decide to make them.  Mine are larger so they only yield 12.

Ingredients:

1 c raw almonds

1 c unsweetened shredded coconut

Juice of 1/2 lemon

Zest of 1 1/2 lemons

Zest of 1 lime

6 tbsp coconut oil

1 tbsp stevia (powder)

Optional: chia seeds for rolling in 

  
Combine all ingredients in your food processor and pulse until it becomes a dough like consistency.  (Enough so you can form them into balls)

  Form your dough bits into small round ball shapes.  You can’t roll them they will fall apart. You kind of need to pack them gently with both your hands (you will figure it out once you start)

Place them on a nonstick baking sheet and pop in the freezer until hardened. This is when you should roll them around in some chia seeds if you desire.  Extra shredded coconut would be Devine as well!

  

Store in a freezer safe container or ziploc in your fridge or freezer.

Tip:  Try not to eat the whole batch at once!  Haha
