So there is this book called “The Plan” by Lyn-Genet Recitas which contains some pretty great information and also recipes. One of my all time faves is called “Spicy Coco Sauce”.
This stuff doesn’t look so pretty, but let me tell you, it MORE than makes up for that in taste. DELISH!
I was so tired last night and really couldn’t put together something creative, but knew we had to have something healthy and easy.
You can really have the sauce with anything, but I cooked up some brown rice to serve it with and threw in a ton of spinach and sweet peas (no chopping and minimal dishes was my goal here). Result? Great, as always!
1 Large Onion (I add extra onion to make the sauce go a little further, I like sweet onion)
3 to 4 cloves garlic, chopped (I use 2)
Ginger, cinnamon, cumin, turmeric, freshly ground pepper, cayenne (all to taste)
1 Can full fat Coconut Milk
1/2 tsp salt
1 heaping tbsp brown sugar (I omit this, as I cannot have sugar)
Sautee your onion, garlic, and spices for a few minutes. Add in your coconut milk, salt and brown sugar, and reduce for 20 minutes, or until thick. (Here is where I toss in my peas and spinach to wilt)
I usually give mine a little taste and add spices as I go. It turns out a little different every time and I kinda like that!
