Grilled Veggie Goat Cheese Panini


Simple and simply delicious.  

I used:

Halved grape tomatoes 

Sliced Aubergine (eggplant)

Sliced red onion

Sliced red bell pepper 

Light goat cheese 


2 slices of gluten free bread (or bun/bread of choice)

Prep your veggies (and drizzle with a little oil and salt and pepper).  Grill eggplant, onion, pepper and tomatoes until desired texture is achieved.  

I like mine to be slightly crunchy still, so not too long.

Lay sliced bread flat and spread goat cheese and avocado on it. Top with assorted grilled veggies.  

(My boyfriend likes to add grilled chicken and pesto to his as well which is also very yummy)

Close to make a sandwich and grill on your panini press until crunchy.  (You can also do this on a pan and place something heavy on top of your sandwich.)


Cut in half and enjoy!
