I used my Soothing Chicken Broth as a base for this quick and easy soup.
I also had the pre cooked shredded chicken on hand from making the broth.
So this recipe was super simple to throw together.
Homemade chicken soup broth
Pre Cooked shredded chicken
Chopped green onion
Finely Chopped fresh ginger
Hot Sauce (Sriracha)
Limes (for juice)
This soup is pretty much “build a bowl” as you wish.
First cook the rice noodles (follow package instructions, does not take long at all).
Next add bean sprouts, chicken and cooked rice noodles to the base of your bowl. Cover with the reheated chicken broth.
Top with cilantro, green onions, fresh ginger and sriracha hot sauce and drizzle with a good squeeze of lime juice. This is all to taste. Ready to eat in minutes!!
