This recipe yielded the most tender, moist and flavourful grilled chicken breasts I have ever made. And great summer flavours. YUMMY!!!
Note: I do apologize to all the vegan/vegetarians reading this!
Ingredients for Marinade:
(used to marinate a package of 7-8 boneless skinless chicken breasts)
Juice of 2 limes
Zest of two limes
1 jalapeno pepper, chopped (most of the seeds removed, I leave a few just for an extra zap of spice)
3 cloves of garlic, finely minced or crushed
1/2 tsp-1 tsp chili powder
1/4 c avocado oil
Salt & Pepper, to taste
Combine all ingredients in a bowl and whisk together.
Trim your chicken breasts and add to a heavy duty ziploc bag. Pour your marinade over the chicken and close your bag without keeping any air inside.
Gently “massage” the bag to ensure the marinade is coating all the chicken.
Lay flat in the fridge for 2+ hours.
Grill away!
