Speedy Layered Chicken Bake

I had some leftover grilled chicken breast that I really needed to use up and hadn’t done much grocery shopping.  This is usually how new recipes evolve-from my lack of ingredients!

Luckily, most of the time, it works out well and I am pleasantly surprised with the results!

This is a super simple weeknight dinner to serve over brown rice or rice pasta.  I actually had it on its own for a hearty lunch.  Yummy.

Ingredients:

3-6 previously grilled chicken breasts, chopped (I only had 3)

1 jar organic pasta sauce (739ml)

Fresh basil, thyme, and oregano, chopped roughly (lots of it!  I ran out, but would have liked to have added more)

1-2 zucchini, sliced into 1/2″ rounds

Soft goats cheese, crumbled (as little or as much as your little heart desires)

Raw pine nuts, just a sprinkle

  1.  Preheat oven to 350 degrees
  2. Grease a glass casserole dish
  3. Layer ingredients listed above in the following order:

Pasta Sauce

Fresh herbs

Zucchini rounds

Crumbled goat’s cheese and raw pine nuts

4.  Bake for 25-30 minutes

5.  Switch oven to broil. Broil for about 8 minutes

6.  Allow to cool for about 10 minutes before serving

DONE!  Super easy and minimal prep, my fave kind of recipe!!!
