I love these! I sometimes feel like a “treat” or something a little different for breakfast. Using sliced apples, almond butter and a variety of toppings, I created these “cookies” and they totally hit the spot for me.
Apple, cored and sliced into rounds (I like honey crisp, because they are a little sweeter, but you can use any apple you like!)
2 tbsp smooth almond butter (unsweetened)
Gluten free rolled oats
Raw buckwheat groats
Optional (if you like a bit of sweetness): Bee pollen, drizzle of honey or agave, dried fruit (raisins, cherries, apricot, cranberries, etc)
CORE YOUR APPLE AND SLICE INTO ROUNDS (ABOUT 1 INCH THICKNESS)
ARRANGE ON A PLATE AND TOP WITH A LAYER OF ALMOND BUTTER
TOP WITH A VARIETY OF DIFFERENT FIXINGS AS YOU PLEASE.
THAT’S IT…THEY ARE READY TO EAT AND OH SO SATISFYING. A LITTLE SWEET, A LITTLE CRUNCH, A LITTLE CREAMY. Yummmmmmm
