Banana Coffee Ice-cream

I love coffee as you may not have already guessed, and with the creaminess of frozen banana…This is a majorly delicious treat.

I have been on a sweet tooth kick this past little while..and trying to find healthy ways to feed the little monster!  This stuff hits the spot!

Ingredients:

2 frozen bananas

1/4 c full fat coconut milk

1/4 c chilled strong brewed coffee

2 medjool dates, pitted

Coffee Beans (for topping)

BREAK BANANA INTO SMALL PIECES INTO YOUR VITAMIX OR FOOD PROCESSOR, ADD DATES.  PULSE UNTIL THE CHUNKS OF BANANA ARE TINY.

ADD COFFEE AND COCONUT MILK AND BLEND UNTIL SMOOTH AND CREAMY.

TRANSFER TO A SEALABLE FREEZER FRIENDLY CONTAINER.

PLACE IN THE FREEZER FOR 2-3 HOURS OR UNTIL HARDENED ENOUGH TO SCOOP.

SERVE IN A SMALL BOWL AND TOP WITH A SPRINKLE OF COFFEE BEANS FOR A LITTLE CRUNCH.

Note:  If left overnight, the mixture will become rock hard.  You can do this, but will have to leave the ice cream out of the freezer for a little while to soften up before serving!

  1. Do you find that caffeine helps your symptoms? I always have a coffee in the afternoon and it seems to take away the brain fog and fatigue most of the time.
