This is an old fave that I used to make when I first tested the waters of the smoothie world before I was brave enough to experiment…
It is super simple, creamy and yummy!
Of course I had to throw a little kale into old faithful to give it a little green power!
1 1/2 c fresh strawberries
1 frozen banana
1/2 c kale
1/2 unsweetened coconut milk (beverage)
Optional: 1 tsp honey, 1 additional banana to make it extra creamy
Combine all ingredients in a high speed blender and blend until thick and creamy.
Pour into a glass and enjoy this sweet delicious treat 🙂

1 1/2 c pure coconut water (chilled)
1 small ripe banana, peeled
1/2 c frozen pineapple
1/2 c frozen wild blueberries
1/4 c raw shelled hemp seeds
1/2 Lemon, juice of
Combine all ingredients in a high speed blender. Blend until smooth.
Pour into your glass of choice and serve immediately.

I had some leftover Put the Lime in the Coconut Smoothie and Blueberry Chia Pudding in the fridge from the other day, so naturally I decided to put together the most delicious pretty parfait for breakfast.
I added a few other layers of goodness for extra creaminess and crunch and here is what I ended up with! A thing of beauty. And so fun to dig into!
I simply layered the following ingredients in this order:
Raw buckwheat groats
My Blueberry Chia pudding
Tbsp of plain greek yogurt (lactose free) coconut yogurt would work great as well
Tsp of my Strawberry Chia Seed Jam
Raw Buckwheat groats
My Put the Lime in the Coconut Smoothie
I topped everything off with a dollop of the Blueberry chia Pudding, frozen berries, sprinkle of chia seeds and some dried goji berries.
This was so much fun to create and even more fun to eat. Such a wide variety of flavours and textures keep the tastebuds tantalized.

3 ingredients make up this lovely addition to any breakfast. Super fast, super easy, and super delicious. Just the way I like it!
I use this chia pudding as a layer in parfaits, on top of greek yogurt, on top of oatmeal, etc. You can also eat a bowl on its own with a little granola or your toppings of choice.
1/3 c chia seeds
1 c frozen wild blueberries
1 c unsweetened almond milk
COMBINE BLUEBERRIES AND ALMOND MILK IN A BLENDER. BLEND UNTIL SMOOTH. THIS MIXTURE WILL YIELD ABOUT 1 1/4 CUPS.
ADD THIS MIXTURE TO A JAR WITH A LID, FOLLOWED BY THE CHIA SEEDS. STIR TO COMBINE ALL INGREDIENTS WELL.
IT WILL LOOK A LITTLE WATERY, BUT DON’T FRET, A FEW HOURS IN THE FRIDGE OR BETTER YET, OVERNIGHT, AND IT WILL THICKEN UP NICELY.
(COVER AND REFRIGERATE OVERNIGHT)

I have been a little obsessed with making my smoothies and meals look a little more scrumptious. I was not being visually stimulated enough by my smoothies any longer.
I was loving this tangy yet sweet concoction this morning. Yummm
Onwards an upwards to the next level smoothies, overflowing with yum and goodness.
Oh, and let me assure you, this is not complicated, in fact it is easy. All you have to do is get a little creative, a little messy and throw in a dash of whatever you have lying around!
Please excuse my nails…I am in desperate need of a mani/pedi!
Toppings pictured: Sliced kiwi, puffed quinoa, frozen raspberries, shredded unsweetened coconut
Ingredients for Smoothie:
1 c coconut water
1 c frozen pineapple
1 scoop greens powder
1 kiwi, peeled
1 tbsp raw cashews
1 tbsp coconut oil
Juice of 2 limes
Combine all ingredients in a high speed blender until smooth.
Drink as is or make it a little fun and heartier and add some other toppings!
To layer as somewhat of a smoothie parfait as pictured, pour a little smoothie into your glass or jar, add sliced kiwi around the edges, throw a little puffed quinoa in there and fill up the rest with smoothie.
Sprinkle a bit of unsweetened coconut on top along with some quinoa puffs and berries, grab a spoon and dig in!
