Replenishing Recovery Smoothie

This smoothie is full of great ingredients and is absolutely delicious.  Perfect for a post workout recovery beverage or really any time.

The pretty pink colour is nice to look at as well ūüôā

Here are a few benefits of some of the superstar key ingredients in this Smoothie:

Coconut water helps to replenish lost electrolytes to hydrate the body and keep the muscles functioning.

Hemp seeds aid in building lean muscle as well as recovery.

Ingredients:

1 1/2 c pure coconut water (chilled)

1 small ripe banana, peeled

1/2 c frozen pineapple

1/2 c frozen wild blueberries

1/4 c raw shelled hemp seeds

1/2 Lemon, juice of

Combine all ingredients in a high speed blender. Blend until smooth.

Pour into your glass of choice and serve immediately.

DIY Activated Charcoal Exfoliating Facial Cleanser

I like to use this DIY facial cleanser once every other day in the mornings to wash my face.  It gently exfoliates, detoxifies and moisturizes my skin after a nights rest.

I would suggest only using this cleanser once per week if you have very dry or sensitive skin, as the baking soda may cause irritation if used too often.

I would not recommend using this cleanser to remove makeup or around the mouth or eye area. ¬†Please also do a patch test before using all over your face ūüôā

Ingredients:

1/2 c coconut oil

1 1/2 tsp activated charcoal powder (or the contents of about 5-6 capsules)

1 tbsp baking soda

6 drops Frankincense essential oil (I use Young Living)

6 drops Lavender essential oil (I use Young Living)

A few quick facts about the amazing ingredients in this cleanser:

Coconut Oil is antibacterial, anti fungal, and moisturizing.  Naturally!

Activated Charcoal Powder draws out bacteria, poisons, chemicals, dirt and other unwanted toxins to the surface of skin.

Baking Soda is great for exfoliating and removing dead skin cells.  It also brightens the complexion.

Lavender Essential Oil is calming and can help with certain skin conditions like acne, psoriasis, eczema, and wrinkles.  It is also anti fungal.

Frankincense Essential Oil is used to reduce inflammation as well as disinfect.

Make this Exfoliating Cleanser:

Combine all ingredients in a small bowl.

Mix all ingredients well.  I used a fork and it worked just fine. (You can also use a whisk if you like)

Try to get as many lumps out as possible, but don’t worry too much because the coconut oil will melt once it is warmed by your hands and face.

Transfer the mixture to glass air tight container.  Allow to set for a few hours.  Store covered in a cool, dark place.

Don’t worry if the consistency changes, as coconut oil tends to harden and liquify depending on its surroundings.

How to Use as a Facial Wash/Scrub:

  1. With warm water, wet a face cloth and hold over entire face for about 30 seconds to open up your pores.
  2. Take a small amount of the cleanser in your hands and gently apply all over face (avoiding lip and eye area completely)
  3. Gently massage the product in a circular motion for about 30 seconds.
  4. Wet your face cloth again with warm water and hold over face for a few seconds.  Repeat this motion a few times until the product loosens up.
  5. Use the wet face cloth to remove any excess product from face.  (Remember be gentle!)
  6. Splash face with cold water to close pores.
  7. Pat face dry with a clean towel.
  8. Moisturize with either a tiny bit of coconut oil or your favourite moisturizer.

As mentioned before, use once per week if sensitive or dry skin.  I use this every other day only in the morning.

Please note I am not an expert and this is only my opinion from my personal experience using this recipe.  If you have serious skin issues, please consult your dermatologist prior to trying this and always patch test!

Cinnamon Cafe Mocha

As I have said before, I typically enjoy my coffee black and bold.

Although, lately my poor belly seems to need a buffer… Which leads me to¬†testing out new additions to my boring black coffee. (You are still my true love, don’t worry!)

Ingredients:

Hot Brewed coffee (about 1 cup)

1/4 c unsweetened vanilla almond milk

1/2 tsp coconut oil

1/2 tsp unsweetened cocao powder

1/2 tsp cinnamon

Optional:  One tsp maple syrup for sweetness (I prefer mine without)

MAKE IT:

Start with your base of hot black coffee (fill your mug about 3/4 full)

In a high speed blender, combine almond milk, cinnamon, cocoa powder, coconut oil and maple syrup.  Blend on high for a few minutes until steaming and frothy.

If you are not using a Vitamix, you may need to heat the almond milk in the microwave for a little bit before blending.

(The Vitamix will actually warm up the mixture if blended long enough)

Pour the blended almond milk into your coffee and enjoy!  Mmmmmm.

Chicken Korma & Beet Greens

I stumbled across an amazing Paleo Blog with incredible recipes a few weeks ago called The Domestic Man.

I was craving a warm delicious dish and was feeling something Indian-currylike.  I found this recipe for Chicken Korma and was completely and utterly inspired.  Thank YOU Domestic Man!!  Be sure to check out HIS SITE HERE and get ready to wow your tastebuds.

I seriously have a major crush on Indian food and Mexican food.  I think it is the spice and the intense flavours.  I am always trying to put a healthier spin on the not so waistline friendly dishes from these cultures.

I started with using his spice mix recipe and then somehow went off track from there.  But let me tell you this was one absolutely delicious dinner!

Curry Spice Blend:

1 tbsp Garam Masala

1 tsp ground cumin

1 tsp salt

1/2 tsp white pepper

1/2 tsp ground turmeric

1/2 tsp ground ginger

1/2 tsp ground nutmeg

1/4 tsp cinnamon

1/4 tsp ground cardamom

Combine all of the above spices in a small bowl.

Chicken Korma Ingredients:

2 lbs boneless skinless chicken breast, cubed

1 onion, chopped (I used sweet onion)

3-4 garlic cloves, minced

1 jalapeno pepper, seeded and chopped (I like to leave a few seeds for a spicy kick)

1 c chicken broth

2 tbsp ghee (clarified butter, you can use coconut oil if you don’t have ghee)

1/2 c full fat coconut milk

20 or so grape tomatoes

Garnish with fresh cilantro

Beet Greens (Cook while Chicken Korma is in the final simmer stage):

This is a very simple side to pair this dish with. ¬†All you need is a bunch of beet greens, chopped and some coconut oil or ghee. ¬†Saut√© the beet greens in the oil until the stems soften and you’re ready to go.

(Add a little bit of salt and pepper if you like, but the flavours from the Chicken Korma tend to be more than enough!)

I prefer serving this dish with greens instead of a carb, as the dish is quite rich already-gotta get my beloved greens in there!! ūüôā

THE STEP BY STEP:

COMBINE CURRY SPICE BLEND IN A SMALL BOWL IF YOU HAVEN’T ALREADY. ¬†SET ASIDE.

PREP AND CUBE CHICKEN, COAT WITH HALF THE CURRY BLEND.  SET ASIDE.

CHOP AND PREP ALL OTHER INGREDIENTS SO THAT THEY ARE READY TO USE.

HEAT 1 TBSP OF GHEE ON A WOK (YOU CAN ALSO USE A DEEP SAUCEPAN). COOK CHICKEN ABOUT 2 MINUTES PER SIDE.

ADD ONION, GARLIC, AND JALAPENO.  SAUTEE FOR A FEW MINUTES.

ADD CHICKEN BROTH, TOMATOES, COCONUT MILK AND THE REST OF THE CURRY SPICE BLEND.

BRING TO A BOIL.  COMBINE INGREDIENTS WELL AND REDUCE TO SIMMER FOR 15 MINUTES.

AFTER 15 MINUTES, ADD ANOTHER TBSP OF GHEE OR COCONUT OIL AND COVER TO COOK FOR ANOTHER 25 MINUTES OR UNTIL THICKENED.  (THE LONGER IT SIMMERS THE THICKER IT BECOMES)

ONCE ALMOST READY TO SERVE, PREPARE YOUR SIDE DISH, EITHER RICE, OR IN THIS CASE, BEET GREENS AS ABOVE.

We thoroughly enjoyed this dish and it was so full of flavour. ¬†It hit the spot for sure. ¬†Better than any indian restaurant I’ve been too and likely much healthier!!

Perfect Parfait

I had some leftover Put the Lime in the Coconut Smoothie and Blueberry Chia Pudding in the fridge from the other day, so naturally I decided to put together the most delicious pretty parfait for breakfast.

I added a few other layers of goodness for extra creaminess and crunch and here is what I ended up with!  A thing of beauty.  And so fun to dig into!

I simply layered the following ingredients in this order:

Raw buckwheat groats

My Blueberry Chia pudding

Tbsp of plain greek yogurt (lactose free) coconut yogurt would work great as well

Tsp of my Strawberry Chia Seed Jam

Raw Buckwheat groats

My Put the Lime in the Coconut Smoothie

I topped everything off with a dollop of the Blueberry chia Pudding, frozen berries, sprinkle of chia seeds and some dried goji berries.

This was so much fun to create and even more fun to eat.  Such a wide variety of flavours and textures keep the tastebuds tantalized.
