I am a little embarrassed to say that this was our dinner last night. lol It is lacking in the veggie department, but sometimes you just gotta have it!
I really do love Mac and Cheese..I won’t lie. But I really cannot bring myself to ingest a regular delicious bowl of the stuff filled with nonsense that my body doesn’t need.
It is made with rice pasta and the Dairy Free “Chreese” is made from mainly Organic Brown Rice Flour, Organic Tapioca Starch, Enriched Nutritional Yeast (nutritional yeast), and Organic Green Lentil Flour. Interesting!
We weren’t sure about how mac & cheeselike this would taste, but once we added the “sauce” it started to smell pretty good.
VERDICT: I wouldn’t say this is comparable to the flavour of traditional mac & cheese but it definitely hit the spot and it was actually very delicious!
Although tasty, it is not cheap at $5.99 a box! But it did yield quite a bit of product, so in the scheme of things, I suppose it isn’t bad for a decently healthy dinner from a box in minutes. I would purchase it again to have in the pantry for a day where I am craving and lazy!
STEP BY STEP:
First, we cooked the rice pasta for about 6 minutes and rinsed it with cool water.
Next, add the “chreese” dry mix packet to the pot along with about 1/2 c unsweetened almond milk and a little bit o Ghee. Whisk until smooth.
Add the pasta back in and coat well with the “Chreese”. You’re pretty much done and ready to serve.
I threw in some grilled chicken breast, fresh cracked black pepper, and pumpkin seeds for a bit of a crunch.
I was seriously tempted to add a huge handful of baby spinach and mix it in, BUT I was all out! Darn!! Next time for sure…
I am always glad to share my opinion and hopefully this will help others to discover a new and interesting healthier version of a cult fave!
