Turkey Taco Salad

So yummy!  A basic juicy salad topped with seasoned cooked turkey mince and red kidney beans.

Turkey Ingredients:

1 package extra lean turkey mince

1 sweet onion, chopped

1 can red kidney beans

1 tbsp extra virgin olive oil

1 tbsp cumin

1/2 tbsp paprika

1/2 tbsp cayenne

1/2 tbsp chili powder

3/4 tbsp garlic powder

1/2 tsp salt

Heat olive oil over medium heat and add onion.  Sauté until translucent.

Add turkey mince and all spices.  Saute until no longer pink.  Add can of beans (drained and rinsed).  Allow to simmer on low.  Remove from heat.

Salad Ingredients:

Romaine lettuce, chopped

Tomatoes, chopped

Avocado, chopped

Bell pepper, chopped

Cucumber, chopped

Shredded Carrot

Cilantro, chopped

Green onion, chopped

Compile your ingredients of choice in a bowl and top with warm taco meat mixture.  I like to eat mine without dressing as the flavour in itself is enough and the tomatoes give it lots of juiciness.  DONE!

Cabbage Detox Slaw

I felt like something other than a greens or lettuce based salad.  This Cabbage Slaw was refreshing and just what my body needed.  And even better, minutes to prepare.

Oh AND is even tastier the next day! So make extra for lunch!

Ingredients:

1/2 Head of Red Cabbage (it looks purple to me!), finely shredded

3 large spring onions, finely chopped

Handful Cilantro, chopped

1/2 raw pepitas (pumpkin seeds)

Handful alfalfa sprouts

1 apple (I used Mutsu), chopped

1 Carrot, peeled and shredded (I didn’t have one, but I wanted to add it!)

Juice of 1/2 lime

Juice of 1/2 lemon

Combine all ingredients in a large bowl and you’re ready to go.

Top with sliced avocado and a sprinkle of Hemp Seeds.

Simple Pear & Walnut Salad


1 large handful spring mix

1 small handful watercress

1/2 yellow zucchini, ribboned

6 spears asparagus, ribboned

1 small pear, sliced thinly

6 red grapes (halved)

1/2 c raw walnuts

2 oz soft goat cheese

Lemon vinaigrette

How To:

Peel the zuchinni and use the peeler to continue ribboning the rest of the zuchinni.  Do the same for the asparagus.


Halve the grapes, slice the pear.

Combine all ingredients and top with 2 oz of soft goat cheese.  You can also add grilled chicken to this salad for more protein.

Lemon Vinaigrette 

Ingredients:

4 tbsp lemon juice (fresh, no concentrate poop)

4 tbsp olive oil
1 tsp honey
1/4 sea salt

1/4 tsp dried thyme

1/4 tsp ground cardamom

Black pepper, just a little

Combine all ingredients in small jar. Shake well. Set aside in fridge.
