“Fat Friday” Healthier Nachos

Fridays are sort of the “cheat day” when it comes to healthy eating. But I always try to incorporate as many healthy ingredients as possible. Made these amazing nachos last night.  Serves 4-6 people


First, grill two chicken breasts with a blackening rub (I like the brand David’s) Chop roughly and set aside.

Next, prep toppings for adding after baking:

Handful of cilantro, chopped

1 avocado, chopped

1/2 lime, juice only

1/4 – 1/2 head lettuce, chopped

Daiya dairy and soy free shredded “cheese”

Optional: Salsa for serving (I like Garden Fresh brand)

Preheat oven to 425 degrees.  Line large baking sheet with parchment paper.  Cover with gluten free organic tortilla chips (I like Neil Brothers brand) Prep ingredients:

1 16oz can white kidney beans, drained and rinsed 

3-4 plum tomatoes, seeded and chopped

1 jalapeño, seeded and chopped (leave the seeds in if you like super spicy)

1 bell pepper, seeded and chopped

1/2 zucchini, chopped 

1/2 red onion, chopped 

Sprinkle all ingredients from beans to onion evenly over chips.  Bake for 15 minutes.

Remove from oven and add chicken and Daiya cheese. Broil for about 5 minutes or until cheese is melted. (Keep and eye on this as it burns easily)

Remove from oven and top with avocado, lime juice, shredded lettuce and cilantro. Serve with salsa for dipping and enjoy! 

Side note: If my boyfriend wasn’t around I’d omit the chips and serve on a bed of zucchini or kale..but that would defeat the whole purpose of fat friday!
