Full of Flavour Chicken Burgers

These chicken burgers are homemade and full of yummy flavours.  I like to eat mine “naked” (without a bun) with a side salad usually.  But today I had it with Shoestring Sweet Potato fries (Yum!).  I will write a post on that later.



1 package extra-lean ground chicken

Handful spinach, chopped

1 clove garlic, finely chopped

Handful of fresh parsley, finely chopepd

1 egg

1/3 c almond meal (I found this made them a little crumbly, but you could also use breadcrumbs or ground flaxseed which I       think may work better at keeping these together)

1 avocado, cut into chunks

1/4 vidalia onion, finely chopped

1 tsp Herbs de Provence

1/2 tsp cayenne pepper

2 tsp sea salt

Pepper, to taste

Juice of one lime

Cilantro (for topping)

1.  Prepare all ingredients that need to be chopped.

2.  Grind almonds (if this is your choice) into a fine texture (like breadcrumbs)

3.  Combine in a  medium bowl chicken, spinach, egg, avocado, spices, sea salt, pepper, lime juice, almond meal and garlic.  Mash all together until well combined.  (I used my CLEAN hands)


4.  Sautee the onion for a few minutes on medium heat.  Add to chicken mixture.

5.  Ready to cook.  I am glad I pan fried these today because they were slightly crumbly, but super delicious so it didn’t really matter!  Heat a little avocado oil on a frying pan and form your burgers to whatever size you desire.  They are better if they are thinner, and will cook though faster and more evenly.

Cook on each side for about 5-10 minutes each.  Keep an eye on them, and use your discretion.  Like I said, it will vary with the shape and size you choose 🙂

I served mine topped with a bunch of fresh cilantro with shoestring sweet potato fries on the side and ate with a fork.  But you can but on a bun, or serve any way you choose!
