Overnight Cocao-Almond Chia Seed Pudding

I love stuff like this.  Throw it all together in a mason jar, shake it up, put it in the fridge overnight.  Wake up, and eat!  So good!  So simple!  Not to mention this does WONDERS for regulating your digestive system (if you know what I mean) 🙂  Which is very important for everyone, especially someone like me that is trying to detox my body of lyme and co-infection bacterias!

There are so many variations on chia seed pudding, but I felt like something with a chocolate kind of flavour.

Ingredients:

1 1/2 c Unsweetened hemp milk (or any dairy free milk of your choice)

1/2 c water

1/4 raw almond butter (melted)

1/4 c cocao powder

2 tsp sweetener of choice (honey or agave work well)  I personally have to use stevia because of my diet, but honey would taste a bit better!

1 tsp Cinnamon

1/4 tsp Sea Salt

1.  Combine all DRY ingredients in a medium sized mason jar.

2.  Melt almond butter in the microwave for a few seconds and add to the mixture.

3.  Warm your hemp milk slightly and add to mason jar.  (If it is cold from the fridge your almond butter will clump)

4.  Put lid on mason jar and shake the mixture until well blended.  Be sure to scrape the sides and bottom down for any clumps.  It will look watery now, but not to worry, overnight the chia seeds will work their magic!

Layered with fresh berries and unsweetened shredded coconut.

Topping ideas:  Layer as a parfait, or simply add your favourite topping choices.  Fresh berries, cocoa nibs, bee pollen, goji berries, pomegranate seeds, raisins, slivered almonds.  The list goes on and on!
