Strawberry Chia Seed Jam

Strawberries are in season here and so naturally sweet right now that you may not even need to add any sweetener to this recipe!

I don’t know about you but I LOVE fresh strawberry jam.  My grandma used to make it in huge batches on the stove with lots of sugar.  I used to eat it by the spoonful as a kid-oops!

This recipe is an updated, healthier, no heat, and no refined sugar version!  With the added goodness of Chia seeds for a boost of protein and help with digestion.

Ingredients:

2 c fresh strawberries, stems removed

2 tbsp chia seeds

2 tbsp water

You will also need a small jar with a lid.  (Mason jars work well)

Optional: A few drops of stevia for extra sweetness

ADD CHIA SEEDS AND WATER TO YOUR JAR.  SET ASIDE.

WASH AND REMOVE STEMS FROM STRAWBERRIES AND MASH WELL INTO A BOWL.  IT WILL LOOK A LITTLE LIKE STRAWBERRY SOUP (Yum!)

SPOON A LITTLE BIT OF THE STRAWBERRIES INTO YOUR JAR AND MIX REALLY WELL WITH THE CHIA AND WATER (IT WILL BE ALMOST LIKE A PASTE AT THIS POINT)

ADD THE REST OF YOUR STRAWBERRIES AND ANY LIQUID TO THE JAR ALONG WITH STEVIA (IF USING) AND MIX REALLY WELL TO DISPERSE THE CHIA SEEDS.

COVER WITH THE LID AND REFRIGERATE FOR AT LEAST 30 MINUTES.  STORE COVERED IN THE FRIDGE.

KEEP IN MIND THERE ARE NO PRESERVATIVES IN THIS JAM, SO IT WILL ONLY STAY FRESH FOR A FEW DAYS.

This jam is a great topper for so many things!  Spread on toast, add a little to oatmeal, pancakes, etc etc.  Use your imagination and practise moderation haha…or at least try 😉
